OENOLOGY BASICS
Organiser: SKN Enologiczne UJ CM
Where: CBI 126
Number of participants i.e. available places: 20
Description: Oenology (gr. oinos + logos) is a dynamically developing field of knowledge. In addition to the complex issues of viticulture, grape wine production, the specificity of the habitat and climate selected for the location of the vineyard, oenology deals with the detailed relationship between the chemical composition of the drink and the revealed properties. Properties are considered on several levels, the most obvious being the consumer level, which comes down to organoleptic characteristics. This is achieved by the strict rules of grape wine tasting and the quality of the wine assessed on its basis. In the classical approach, the appearance (e.g. color and its intensity, color reflections, translucency, brilliance), smell (e.g. the so-called flower, fruit and spice aromas) and taste of the wine are evaluated.
At the Faculty of Pharmacy of the Jagiellonian University Medical College in Krakow, research has been conducted for several years on the health-promoting effect of grape wine and its ingredients on human health. Particular attention is paid to the group of micronutrients – natural polyphenols. In this group, the representative of the chemical class of stilbenes – resveratrol – arouses the greatest interest. Countless beneficial effects of this compound have been described in the scientific literature in experiments on animal models, including anti-atherosclerotic, anti-cancer and anti-neurodegenerative effects. Other compounds contained in wine, such as catechins, quercetin, gallic acid, anthocyanins and procyanidins, are also being studied. Parallel to the research, the Faculty of Pharmacy has been organizing subsequent editions of postgraduate oenological studies for over a decade. They enjoy unflagging interest and it should be noted that when they were created in 2011, they were the first course of this kind in Poland. Currently, the director of studies during the 12th edition is Dr. Maciej Gawlik who will conduct this workshop.
